So I went to apply at a gas station

And I got the application but I saw that their beef jerky was 50% off so I was like "um yes I'm buying it"

Anyways so I bought it and I've been eating it and then I looked at the bag and the "Best By" date is July 7th 2017!!!

But like it tastes fine and it was vacuum-sealed, am I gonna die?

if it doesn't taste strange or smell strange or look wrong (the color) food is generally safe to eat. Our senses partly developed to tell us what foods are safe and what aren't, use them!
