And instantly click with them and then fall out of touch with them for 6 years and then you randomly wind up in places you’ve been to together and can’t stop thinking about them and you reconnect with them and it’s as if nothing happened or changed, does that make them your soulmate or am I just delusional?

I don't think that makes you delusional at all. 27 is not that old and 6 years fly by fast. If you still click and it's like you're picking up where you left off, then see where it goes. They may not be your soulmate, but if it clicks and keeps clicking, perhpas they could be.
