It has to do with the freezing point of water vs the freezing point of nitrogen. The freezing point of water is 0 degrees Celsius, whereas the freezing point of (liquid) nitrogen is -210 degrees Celsius.

The air we breathe contains nitrogen in its gaseous state (therefore, it is warm enough to be a gas). Nitrogen doesn't condense into a liquid until it reaches its boiling point of about -195 to -196 degrees Celsius.
