Chef Ramsay: You two baffle me. You both got perfect 5’s in the Signature Dish challenge... but you’ve both been on a rapid downward spiral, and I don’t know if either of you can come back...

Kelsey and Kinsington: Yes, chef.
Chef Ramsay: Get out of here.
Kelsey and Kinsington then go back upstairs to rejoin their teams for the night.

than the Protein Idenification Challenge! Here’s how it works... Each team will go one at a time. When the timer starts, one member of each team will come down and taste the dish next in line. Then, they must decide which of our many proteins are in that dish! One you figure it out, your teammate will taste the next dish. The timer will stop when all 7 members of your team have correctly identified their proteins. The team who has the shortest time will win! Red Team... you won service last night, so you’ll be setting the time to beat!
The Blue Team heads up to the dorms to await their turn.
The order in which the read team will go is as follows:

Their time starts.
Assi identifies her protein on her first try. She only adds 36 seconds to the Red Team’s clock.
It takes James a few tries to identify his protein, but he is able to do it in a minute and 45 seconds.
Veronica is also able to identify her protein on her first try, being slightly faster than Assi with 34 seconds.
Opal takes a little longer. She keeps bringing up wrong proteins. When she is finally correct, she has added 2 minutes and 6 seconds to the Red Team’s clock.
Big Dog performs even worse. He keeps making wrong guesses, and he has added 3 minutes and 35 seconds when he finds the correct protein.
If you thought Big Dog’s performance was bad... Kelsey takes even longer. It takes her many many guesses, and a whopping 4 minutes and 31 seconds to find the right protein.
Courtney makes up for lost time and identifies her protein after 2 or 3 guesses, only adding 57 seconds to the Red Team’s clock.
Chef Ramsay: Okay! Red Team... your final time is...

14 minutes and 4 seconds! That is pathetic. Most of your performances were embarrassing. Kelsey... it took you FOUR AND A HALF minutes to figure out what that dish was made with? Unbelievable. You guys better hope the Blue Team has an absolute disaster.
It’s now time for the Blue Team to indenting the proteins. They will be tasting the same dishes that the Red Team tastes in the same order, having to beat a time of 14 minutes and 4 seconds.
The Blue Team’s order is as follows:

The Blue Team begins their challenge.
Brad identifies his protein after a few guesses, adding only a minute and 22 seconds to the Blue Team’s clock.
Crystal, however, takes longer. She makes several guesses, and when she is correct, she has already added 3 minutes and 4 seconds to the Blue Team’s clock.
Merk identifies his protein in 2 tries, and only takes up 46 seconds of time:
Kinsington does the same, and identifies his protein in 57 seconds.
Vincent takes slightly longer. He makes a few guesses and is clueless. When he’s finally correct, his time is 2 minutes and 2 seconds.
Donald knows what his protein is immediately after tasting the dish. He quickly grabs the correct protein and only wastes 25 seconds.
Finally, Marjorie is surprisingly quick to find her protein. She gets it on the first try, adding only 36 seconds to the Blue Team’s time.

Chef Ramsay: Blue Team, well done! For your reward today, I’ve arranged for you to travel on a boat into the ocean to go deep sea fishing! You’ll be given all of the supplies you need, and you even be given pointers on how to catch the most fish! Halfway through... we’ll have special chefs prepare and cook your caught fish for lunch! Get changed, your limo is waiting!
The Blue Team then gets dressed for their day of fishing.
Chef Ramsay: Red Team... you’ve got a grueling day ahead of you. As I said, a group of chefs will cook their caught fish. Well... you are that group of chefs! Before you serve them, however, you need to prepare all these fish for tonight’s service.
Several piles of dead fish are rolled into the room.
Chef Ramsay: I’ll be teaching you how to clean, cut and properly prepare these fish. Then, I need them all to be prepared. When the Blue Team comes back, you’ll prepare and cook their catches of the day. Go up to the dorms and get ready.
The Blue Team enjoys their day deep sea fishing while the Red Team prepares fish for both the Blue Team and Hell’s Kitchen diners.

James overcooks his risotto once while Donald over seasons his risotto twice. These are the only appetizer mistakes of the night.
When entrees are being ordered... problems arise in the Red Kitchen.
Chef Ramsay: Veronica! Big Dog! Who cooked these?
Big Dog: I cooked the lamb, Veronica cooked the wellington.
Chef Ramsay: Well look at this... I have 2 ran racks of lamb and 2 raw wellingtons. This is SHIT. Make it right!
Meanwhile, Chef Ramsay notices that no garnishes are made for either kitchen.
Chef Ramsay: Hey, Courtney! Opal! Brad! Vincent! Where in the FUCK are the garnishes?! The red kitchen needs 2, and and blue kitchen needs 3! Right now, from both teams, I have ZERO!
Brad: Sorry chef, I’ll get started on that again.
Courtney: So will I, chef.
Chef Ramsay: Oh my god!
Brad and Courtney both burn their garnishes once, and bounce back for the rest of the night.
The rest of the mistakes of the night go horribly. Merk overcooks his wellington, Crystal sends in rubber scallops, and Marjorie sends in not 1, not 2, but 3 raw racks of lamb.
However, things are worse in the Red Kitchen.
Kelsey has made 2 raw servings of scallops while Assi has made 2 overcooked servings of salmon. Veronica has also sent in 3 more servings of raw wellington.
However, Chef Ramsay reaches his limit when he sees another mistake.
Chef Ramsay: Kelsey! Look at this... perfectly cooked scallops... but they aren’t fucking SEARED! This is RIDICULOUS! Every member of this team has screwed up tonight, and I’m SICK of it!

The Red Team has been kicked out of service yet again, and the Blue Team is able to finish strong.
The Red Team is tasked with something they’re very familiar with... nominating 2 chefs for elimination.
They agree that Kelsey should go up for sure. Kelsey doesn’t even try to fight back. They also say that their second nominee should be Courtney due to her poor performance on garnish tonight. While Courtney admits this wasn’t her best night, she says that Veronica should go up instead of her because she kept screwing up her wellingtons.
The chefs argue for a while, but they eventually reach a decision.

Last night, I told you that you were on thin ice, and tonight, you made the ice break. And your whole team fell under. Please give me your jacket.
Kelsey gives her jacket to Chef Ramsay and leaves Hell’s Kitchen.
Chef Ramsay: Red Team, I wanna make one thing clear. The next time you’re tasked with nominating 2 chefs, make sure you have the right 2 up here. If you don’t, I WILL throw it right back at you. Is that understood?
Red Team: Yes, chef!
Chef Ramsay: Now fuck off.
The chefs then head up to their dorms for the night.
As Chef Ramsay walks up to his office, his voice narrates the scene.
“I tried to give Kelsey a wake up call last night, but tonight, she was clearly still sleeping. Sweet dreams, Kelsey.”
Chef Ramsay then hangs Kelsey’s jacket, and her picture burns up.
