You could mix some corn starch into a cold liquid (maybe tomato juice or a veg stock or something) and then add it and cook to thicken

if i ever thicken something up i usually mix corn starch with a liquid in another cup (usually water) and make sure there isn't like lumps in it. then i pour it into the pan and keep stirring that and it'll thicken up a bit
